Passionfruit Bellini
How we make it.
2 ounces Passionfruit purée
3 ½ ounces cava, prosecco or champagne, chilled
Pour passionfruit purée into a champagne
flute or coupe glass and top with chilled sparkling wine of your choice.
Garnish with fresh mint and enjoy.
Why we make it.
I love a nice sparkling wine. Cava, prosecco, champagne. It doesn't matter which. Ordinarily I like to drink a bubble naked. Get your head out of the gutter, I meant without OJ. The addition of a juice offends me. But for some reason a purée hits different. That I will allow in my flute. Passionfruit purée in particular, is always welcome. I discovered the wonder of passionfruit cocktails on my first night out after having my first baby. It's tart. It's bright. I don't know, if you like Skittles you'd probably love it. A few years ago my friend Callie and I went through a passionfruit phase. Margaritas, bellinis, you name it, we slang it. She is expecting her first baby now and last weekend we hosted a shower for her. What to serve? Passionfruit bellinis, of course. She had hers with Perrier. If you want to treat a mother to a twist on her prosecco this Mother's Day, order a little purée and add it to her coupe for a breakfast bubble. She gone love it. And that's why I made it.
