Bekah's Extra Butter & Salt Lemon Bars
How we make it.
Crust
2 cups flour
½ cup powdered sugar
1 cup (2 sticks) butter (plus extra), melted
Pinch kosher salt (plus extra)
Filling
4 eggs
1/3 cup lemon juice
1/3 cup flour
2 cups sugar
Crust. Mix flour, powdered sugar, butter
and salt. Cover bottom of 9x13 inch pan. Pat lightly. Bake at 350 degrees for
35 minutes.
Filling. Beat 4 eggs, add lemon juice,
flour and sugar. Pour over baked crust while hot. Bake at 325 degrees for 30
minutes. Sprinkle powdered sugar on top while hot.

Why we make it.
Most of you will not know this, but in
addition to being a meatball maker and a childhood smoker I hold a degree in
biblical counseling from the Southern Baptist Theological Seminary. Another
thread in my life's tapestry. While I am not trained in mise en place, I am
trained in putting your life in place. And I did it for a while. In my 10+
years in ministry I met one of the dearest friends of my life, a blond-haired
Texan named Rebekah. She hails from Sherman. She lived in Louisville. She left
for New York. She flew outta Florida. She landed in Texas. She's back in New
York. Ministry does that. These lemon bars have gone with her everywhere.
Originally from a cookbook of her eccentric grandmother's, some woman named
Alice Banghoff's shortbread and curd has made its way around the country
through Bekah with the addition of extra salt and butter, to taste. I can't
tell you what that means but I hope you'll try to make these and work it out
for yourself. That's what Bekah would want you to do. Some healers are cooks
and some are counselors. And some are both. And that's why we make it.
