Mom's Country Ham Biscuits
How we make it.
*makes 24 biscuits*
24 Mary B’s Tea Biscuits (you buy them frozen)
1 pound shaved country ham (if you’re in Louisville, we like Plehn’s!)
¼ pound salted butter (1 stick), room temperature
Preheat the oven to 375 degrees. Arrange frozen tea biscuits on baking sheets and cook for 10-12 minutes. Remove biscuits from the oven and cut each biscuit in half. While still warm, slather the insides of each biscuit with butter. Add country ham to each biscuit and replace top. Place back in the oven for 10-15 more minutes until warm and brown on top. Serve warm or room temperature.
*Note – You can find Mary B's biscuits in the freezer section of Kroger. You want the tea biscuits, not the full size. Happy hunting. If making these biscuits ahead you can refrigerate or freeze them once you add the ham and butter before you bake a second time. They will keep in the refrigerator for a few days or in the freezer for a few months. Just thaw and bake!

Some people might say I should stop telling all my secrets but I don't want to. I think keeping recipes to yourself is dumb. Let's all enjoy the wonderful things! Especially the simplest ones. Here’s another of our best for you. This recipe for country ham biscuits came to my mom via her best friend Polly years ago. Like Rae, Polly was an incredible cook who has passed away, leaving behind the food that filled her table and now keeps her at ours. Somewhere along the way these biscuits became Mom's, but first they were Polly's. Like Lee's Famous Potatoes or Mama Susu's Curry Dip, these biscuits are the one trick of a one trick pony that prove simple is best, salt is life and carbs bring happiness. My mom, gardener not cook, makes these buttered, bite-sized, salty ham biscuits for every occasion. Christmas, Easter, Derby. Every kind of shower. They're the ubiquitous favorite on the table that lets you know it's time to celebrate something. Too easy not to make and too delicious not to share. That's why we make them. I hope you will, too.
