The Key Largo
How we make it.
2 ½ ounces coconut rum
2 ½ ounces pineapple juice
3 ounces soda
Lime wedge
In a tumbler over ice combine coconut
rum, pineapple juice and soda water, stirring together. Garnish with a lime
wedge. Enjoy.
Why we make it.
A few years ago, my husband and I took a sort of second honeymoon to the relaxing, all-inclusive beach experience we snubbed in favor of a Venetian adventure the first go round. We planned to do nothing and like it. Until we breached the sandy beach of Key Largo I had never been to an all-inclusive. In all honesty all-you-can-eat is not for me. I find a bottomless pit of interesting options overwhelming on every occasion, but especially at the Tiki Bar. How many daquiris can one gal drink? My solution to harnessing the tropical contact high without being face down in my bungalow's backyard by sunset was the Key Largo. I started having the bartenders mix them for me on the first day, and it was such a great drink I took it home. A pared down pina colada with a splash of soda and a lower alcohol content than your standard Pain Killer, this spritzy sip is the skinny girl's answer to the Mai Tai. Smell the breeze without hitting the floor, that's what I say. And THAT'S why I made it.
