KK's Famous Supper Spoiling Queso

How we make it.

1 - 16  ounce brick Velveeta
1 tablespoon olive oil
1 onion, diced
1 green bell pepper, diced
1 - 10 ounce can Rotel

Dice the Velveeta into cubes and place into a large microwave safe dish or bowl. I use CorningWare that has a lid so I can store the queso in the fridge later. In a medium sized skillet heat olive oil on medium high and add the onion and pepper. Cook for 5-8 minutes until softened. Once soft add the whole can of Rotel, no draining needed. Stir together until combined and set aside. Microwave your Velveeta for 5 minutes, taking out halfway through to stir so the edges don't burn while the middle stays clumpy. If you know Velveeta, you know this is key. Once Velveeta is melted, pour the vegetable mixture in and stir to combine. Serve hot with tortilla chips. Reheats beautifully.

Why we make it.

My mother has been making this queso for my entire life. It has spoiled hundreds of dinners since the 80's. No matter how much I learn about processed foods I will never quit this queso. It's my childhood. It's my future. It's almost Super Bowl so you should listen up. Four ingredients waltz in a microwaved CorningWare dish; a melon colored moon cratered with peppers, onions, chilis and tomatoes. It's oddly sweet. It's wonderfully creamy. You can't get enough. It's horrible for you. But do we care? Do we really care? I don't think every once in a while we really do. And that's why we make it.
