Sage Mayonnaise
How we make it.
1/2 cup Duke's mayonnaise
2 teaspoons fresh sage leaves, chopped
1 garlic clove, grated
1/4 teaspoon Kosher salt
1/4 teaspoon black pepper
Combine mayonnaise, garlic, sage, salt and pepper in a small bowl and stir together. Store covered in the refrigerator for up to a week for turkey sandwiches, Lee's Famous Potatoes, ham biscuits, vegetable platters and whatever else needs it.
Why we make it.
One of my oldest friends and I have a deep love of mayonnaise. There is this turkey sandwich in town at our favorite middle school haunt, Blue Dog Bakery, that used to come slathered in sage mayonnaise. I think originally it was served on focaccia. Definitely with turkey, bacon and Granny Smith apples. But the mayonnaise was the best part. If you are anywhere near Thanksgiving, having a cache of sage mayo in your Frigidaire is a must for all those leftover turkey sandwiches you could be making better. There is simply nothing better. That's why we make it.
