Agua Fresca Three Ways

How we make it.

Pineapple Agua Fresca 

4 cups fresh pineapple, chopped
4 cups water
2 limes, juiced
2 tablespoons agave

Place pineapple, water, lime juice and agave in a blender and puree into a liquid. Strain through a mesh strainer into a pitcher to remove solids. Drink over ice, garnished with lime or mix with cocktails.

Agua Fresca Margarita

2 ounces Pineapple Agua Fresca
3 ounces Reposado tequila
1/2 ounce Cointreau
Ice
Salted rim

Wet the rim of a tumbler glass and dip in kosher salt. Add ice and pour in tequila, Cointreau and agua fresca. Stir to combine and garnish with a lime wheel.

Agua Fresca Daquiri

3 ounces Pineapple Agua Fresca
2 ounces black rum
Ice

Combine rum and agua fresca with ice in a cocktail shaker. Shake until ice cold. Pour into a coupe glass and garnish with a lime twist.

Why we make it.

I'm always looking for new ways to make fresh cocktails. I'm pretty simple about it, I'm not using tinctures or anything. Whatever that is. Liquor, soda, a little citrus, a dash of salt or a cherry, depending. I've been seeing agua frescas around and thought they sounded interesting and versatile to play around with. When my son snuck a $9 bucket of pineapple chunks in my cart yesterday, I saw my chance. Agua fresca is a non-alcoholic Central American drink of water, fruit, sweetener and lime. This North American decided to add tequila. And rum. Aptly named, agua fresca is a fresh pitcher of fruit-perfumed water to base your next summer cocktail hour around. Interesting, fun and versatile. That's why we make it.
