Mayonnaise Slathered Heirloom Tomato Sandwich

How we make it.

1 heirloom tomato, sliced thin and salted
Torn fresh basil
Duke's mayonnaise
Mike's Killer White Done Right Bread, toasted

Why we make it.

We make it as a vehicle for mayonnaise. I shouldn't have to tell you that. If you add the right mayonnaise to the right vegetable (or technically fruit in this case), you do not need meat. Get your saturated fat elsewhere, quit overthinking the proteins. There is nothing more toothsome than a perfectly composed tomato sandwich, room temperature, well salted and slathered in mayonnaise. Both sides of the bread. From May through September this is lunch or dinner, ideally both. Made with love. Slathered in mayo. I keep a basil plant alive all summer just for this.
